anti california california cabernet

This 100% California Cabernet Sauvignon reimagines the classic "California Cab" in every way. We harvested the fruit early in the season for freshness, and fermented with native yeast by carbonic maceration. This combination allowed for the most "untouched" example of cool-climate Cab we could imagine, highlighting fresh fruit and intriguing spice. It was aged for six months and bottled by hand without the use of any additives.

We had an opportunity to work with this rare varietal from some heritage vines dating back to the 1970s. Harvested quite early in the season, we destemmed, crushed, and fermented the juice on the skins for six weeks with native yeast. It was then aged in stainless steel for six months and bottled by hand, unfined and unfiltered, with no additives.
